Now since many of us are going to be having well-earned long and relaxing weekends to spend with great family and friends, why not create a fun Memorial & Labor Day Weekend menu with some of these OUTRAGEOUS, SUPER easy-to-follow recipes that I’ve come up with over summers past?!
In fact, I’ve even put a little menu together for you with a few options that yours truly suggests. Whatever you decide to make, EVERYONE in attendance will probably ask you to make these again and again…or beg you for the recipe! ?
Appetizers
Mexican Street Corn
Not only is this so incredibly delicious and crazy easy to make, it will be on your plate in 10 minutes from the moment you begin cooking. The perfect appetizer to any meal.
Roasted Red Pepper Hummus
Everyone who’s made my hummus has said it is so much better than any store bought AND it’s WAY healthier than cream-based dips. Perfect as a starter dip to welcome your guests!
Southern Boiled Peanuts
No say-goodbye-to-summer gathering in the South would be complete without some rootin’ tootin’ boiled peanuts (okay, maybe I’m trying too hard with some of these words but I’m running out of adjectives here). Give ’em a try – they’re salty, they’re spicy and they’re a joy to pass around either while the guests are arriving or while sitting around a bonfire later in the evening.

New England Clam Chowder
This will very likely be one of the best clam chowders you’ve ever slurped, if not THE best. It will be the perfect starter for any meal, particularly a clam bake or shrimp boil.
Manhattan Clam Chowder
The redder, tomato-y brother to to New England Clam Chowder, this soup is like a vegetable soup with the joys of clams within! Enjoy!
Corn & Crab Chowder
Are you ready to have the best Corn Chowder you’ve ever had in your lifetime? Good. Because it’s even better with sweet, succulent crabmeat!
Lobster Bisque
My lobster bisque gets tons of loving too! It pairs beautifully with any seafood or meat dish to follow. One taste and you’ll end up licking the bowl clean. Guaranteed.
Bouillabaisse
Calling all seafood lovers – THIS is the soup for you! One of my most premium soups, it incorporates all swims of life, is absolutely to die for and may even help you find Nemo!
Pastas
Chicken Marsala Pasta
One of my most POPULAR pasta dishes and a HUGE crowd pleaser! This dish takes the best of a chicken marsala dish, makes it creamy, adds in a few goodies like sun-dried tomatoes and then gets all tossed up in some Farfalle (bowtie) pasta! What’s more? It’s beautiful to look at!
Sausage & Shells
This one is actually THE most POPULAR pasta dish I’ve ever created! And, once you’ve tried it – it’s pretty clear to see why! Sausage in a creamy, cheesy garlic garlic sauce tossed with pasta shells. You won’t even need to do the dishes because you’ll licking everything clean.
Spicy Sausage Pasta
The creamy, marinara-based sister to Sausage & Shells – THIS pasta packs a bit of a spicy kick to it and is one of my all-time favorite creations!

Get out your broomsticks, because you’re all gonna defy gravity once you see and taste this WICKED Green Goddess Pasta!
Magical Macaroni Salad
This loaded macaroni salad takes it to the next level and is SO easy to make (not to mention, it’s pretty to look at). The perfect companion to those Baby Back Ribs.
Pesto Chicken Pasta Salad
This pasta salad is one for the books. Not only is it delightful served cold, but it’s JUST as good served hot. A mean, green, delicious machine that will pair beautifully with just about any dish!

The Perfect Ten Burger
To put it bluntly, this is the greatest homemade burger you’ll ever have. Whether you grill it or pressure cook it, it’s mouthwateringly juicy and packed full of flavor.
French Onion Chicken
Ah, my French Onion Chicken. Not only is it one of my most popular recipes, it’s also gone mega-viral within the Instant Pot world! EVERYONE is making it and EVERYONE is loving it. But don’t take my word for it, try it for yourself. Sheer perfection. This will pair up wonderfully with my Hummus starting the meal.
Baby Back Ribs
Not only are these one of my most popular recipes, they are also so fall-off-the-bone tender and full of a hickory flavor, your guests will think you smoked them for hours. Pairs beautifully with the Macaroni Salad, Pesto Chicken Pasta Salad and Mexican Street Corn!
Ratatouille
For anyone who has a garden full of treasures, my Ratatouille is the PERFECT thing to make! Healthy, light and bursting with a rich, stew-like flavor – you’ll swear you were eating a hearty beef stew, without any meat whatsoever!
Mussels Mariniere
It’s time to flex your mussels! These are so unbelievably simple and delicious – not to mention a sauce that will have you sopping up every last drop with some crusty french bread.
Shrimp Boil
Another recipe that is literally a dump-it-in-the-pot and relax while having a few cocktails or beers. Once that lid comes off and you dig into this treasure, you’ll be hooked on it for life.
Lobster Rolls
Not only will you be able to make Lobster Rolls in your Instant Pot, but you’ll be making some of the best ones you’ve ever sunk you teeth into. Pairs as a wonderful follow-up to my New England Clam Chowder.
Polynesian Pineapple Chicken
I am really in love with this dish. The sauce is on another level and the tender chicken thighs coupled with the pineapples and peppers will send your mouth and belly on a trip to the tropics. Follow it up with my decadent Pineapple Upside Down cake.
Desserts
Apple Crumble
This All-American dessert FULL of soft apples entrenched in a rich and gooey caramel-maple sauce is one of my most popular requests! Serve it after ANY meal with heaping scoops of vanilla ice cream and extra caramel sauce – especially with the Baby Back Ribs to keep in line with that American theme.
Pineapple Upside Down Cake
A cake so moist, so pineapple-y and SO flavorful with a brown butter sauce cascading over the top, your eyes may roll back in pure bliss. Serve this one up right after the Polynesian Pineapple Chicken (or any meal).
Bananas Foster
What can I say? This one will just make you appreciate life a little more. Goes great after any meal.

Hi, how are you? I’m Eric and I have to keep my daily sodium intake down to 2000MG or less. This is since I had my aortic valve replaced.
I did a search on “low sodium”. The results are rather curious. Some of the recipes made me question how much sodium would be in them.
Do you have a list of recommended low sodium recipes and how much sodium is in the dish?
I’m rather new to Instant Pot . I’ve made the sweet Italian sausage and mushroom risotto, baby back ribs, hard boiled eggs… My wife is beginning to be impressed!! Which is a relief….Lolo
