Happy Cinco de Mayo!

Cinco de Mayo is a day to celebrate Mexico’s victory. For me, Cinco de Mayo is the time for us to  welcome in the Spring with some good company, some margaritas and/or ice cold beers and, of course, GREAT eats (any excuse for that, right?). So I’ve put together a menu of Mexican marvels for you that’ll have you singing, dancing and entering a food coma in no time!

Appetizers

Guacamole

Perhaps the most important thing to grace ANY Cinco de Mayo gathering is guacamole and chips. To put it quite simply – THIS. GUAC. ROCKS.
Now there are also no limits to how one chooses to make their guacamole so long as it has that one mandatory base ingredient: Avocados. From there, the sky’s the limit on how to give this king of green dips its personality.  I may be partially biased, but my guacamole is one of the greatest and it’s going to win the appetites and hearts of any guacamole lover!

Buffalo Chicken Chili

Speaking of addicting things to eat…this Buffalo Chicken Chili may be a chili, but it also works beautifully as a dip (just check out the recipe by seeing how adding more cheese will transform this)! It’s basically like one of the best Quesos EVER!

Frito Pie

What’s a Frito Pie? Nothing more than a delicious, thick masa-based chili served in an individual bag of Fritos topped with the typical entourage of Mexican fixins and then all mixed together!

Not only is it perfection in a bag, but it’s SUPER fun to eat!  The kids (and the young at heart) will adore it as well everyone else you feed it to! It’s the ideal appetizer for any Cinco de Mayo!

Soups

Chicken Tortilla Soup

The thing about Chicken Tortilla soup is that, like Pasta Fagioli, it’s very different depending on the person who makes it. Some are super tomatoey while others are more chicken soup based. Some also like to incorporate beans and corn (but I didn’t use those in mine – I’ll save that for chili). I decided to balance mine out by making it more chicken-packed with a hint of tomato but also adding a light touch of creaminess to the mix.

The soup couldn’t be easier to make thanks to the Instant Pot, is delightfully zesty in flavor, on the healthier/lower-sodium side and is truly the Mexican version of the classic Chicken Noodle Soup we all know and love!

Chili

There’s Chili…and then there’s CHILI.

This here Chili is going to satisfy ANY Chili lover – guaranteed. Why? Because I load it up with some of the simplest and tastiest ingredients that packs a classic and premium flavor punch so rewarding, you’d better clear the mantle for that office Chili cook-off trophy to show off! In fact, many of my readers have already entered these into Chili cook-offs and wrote to tell me they claimed the top prize!

Creamy Chicken Enchiladas

MEGA-POPULAR RECIPE ALERT! This is one of my creations that have flown off the charts with resounding success from all of my readers!

Enchiladas are one of those things that you really can’t go wrong with. There are many variations of this iconic dish usually involving chicken and cheese and various sauce options. And who doesn’t love a tortilla filled with chicken, cheese and covered with a creamy sauce and MORE cheese?
So I present to you my Creamy Chicken Enchiladas which go the mild route in terms of spiciness, but packs a flavor and satisfaction that will keep you coming back for more and adding it to the permanent rotation.  Get ready, because your mouth is about to have a fiesta!

Arroz con Pollo

ANOTHER MEGA-POPULAR RECIPE ALERT!

So one of my all-time favorite dishes whenever I go to a Spanish (and some Mexican) restaurants is the classic Arroz con Pollo, which translates to Rice & Chicken (or Chicken & Rice). It may sound pretty basic from the sound of it, and it is. But only in how easy it is to make. It is ANYTHING BUT basic in flavor!
Folks, this Arroz con Pollo is one to rival all others as it is so astoundingly rich in flavor thanks to a wonderful, full-bodied sauce that embodies the chicken and rice, and I also add in some of that classic Spanish sausage known as Chorizo into this dish as well. It is the furthest thing from dry and dull. It is just bursting with a flavor fiesta in every bite.
What’s more, this is a SNAP to make in your Instant Pot or Ninja Foodi with zero babysitting!

Paella

Okay so maybe is is more of a classic Spanish dish than a Mexican one, but with a potpourri of awesomeness combining rice, veggies, seafood, chicken and sausage packed so full of flavor, you’ll hear endless “Mmmms” with every bite!

Mexican Street Corn

Now to me, there really isn’t any other way I prefer my corn than slathered in this incredible tangy cotija cheese sauce that is easily whipped up as the corn is cooking – they call it the Mexican Street Corn style due to it being exactly that – made in carts on the street. Folks, I’m telling you now it takes corn to the next level.

And what’s even better is how QUICKLY it cooks in the Instant Pot.  This will be on your plate in no time at all!

Refried Beans

A wonderfully thick and creamy consistency with hints of onion, garlic, mild chiles and cotija cheese, not only are my homemade refried beans the perfect side to any Mexican dish, but they can make a wonderful and satisfying meal on their own!

Dessert

Dulce de Leche/Caramel

I mean this one speaks for itself. Need I say more? It’s a joke how easy it is to make in your Instant Pot AND it goes on basically ANY dessert (or eat it on its own)!
