Pasta is up there with things I never get tired of making and can do it on the daily. Today, I am going to show you how to make what will be one of the easiest, quickest, simplest, and tastiest pasta dishes ever. It involves using four ingredients: pasta, broth, my garlic herb cheese recipe (or a package of Boursin or tub of Alouette garlic & herb cheese) and a little grated Parmesan or Pecorinio-Romano cheese. The result is one that will be done in 15 minutes from the time you begin prepping, making it a go-to, crowd-pleasing meal of all ages for lazy days, busy nights and everything in between. Mission: It’s Pastable

Instant Pot
Ready to see how simple this is? It’s so silly easy you’ll think this recipe is a joke.. Just place your Instant Pot on the counter.
Gemelli pasta in Instant Pot
Add in some pasta (gemelli in this case, but you can use any short-form pasta)…
Broth in Instant Pot
…and a broth of your choice.

Pressure Cook The Pasta

Smooth out the pasta with a wooden spatula or mixing spoon so that the pasta is mostly submerged in the broth. And that’s all for now! Secure the lid and pressure cook.

Once done wit the cooking cycle, you’ll see the gemelli will have cooked perfectly. And we should still have a little broth in the pot for our sauce foundation.

The Garlic Herb Cheese Finish

Adding garlic herb cheese to pot
Add in the garlic herb cheese (or Boursin or Alouette – see the recipe card below)…
Adding grated Parmesan to pot
…and some grated Parmesan or Pecorino-Romano cheese.
Stirring everything in the pot until a cheesy sauce forms and coats the pasta
Still until all is combined into a garlic herb-cheesy sauce, where everything will come together beautifully (the longer it rests before serving, the thicker the sauce will become).

Prep Time 1 minute
Cook Time 6 minutes
Additional Time 2 minutes
Total Time 9 minutes

  1. Add the pasta and broth to the Instant Pot, smoothing out the pasta with a wooden spatula or mixing spoon so it's mostly submerged in the broth.
  2. Secure the lid, move the valve to the sealing position, and hit Pressure Cook or Manual for 6 minute at High Pressure. Quick release when done. You'll see some broth will remain in the pot, which is exactly what we want for our sauce foundation.
  3. Add the herb cheese and Parmesan and stir until combined and melded into the sauce. Let rest for a minute before serving.

Jeffrey's Tips

If you have leftovers or if the pasta sits out a while, add a few splashes of some cream, half-and-half, or milk to the pasta and mix in to bring it back to saucy life. Same with any leftovers in the fridge - just add some cream and mix while reheating on the stove or in the microwave.

For a nice tomato-kissed finish, add a few splashes of your favorite marinara sauce after adding the cheese in Step 3.

    Made this today after seeing your post, and it is delicious. I actually like it more than regular mac and cheese. I used small shells that I had on hand, which made it a bit drier, so a little added milk and spoonful of butter were necessary, but we will definitely make this again! Thank you for sharing this creation!

    Excellent recipe. I took the advice of a Youtube comment and added rotisserie chicken dark meat then added some Korean red pepper flakes to give it some extra pizzazz.

    I have felt like crap the past two and 1/2 weeks..thought this sounded good…just wow..cut recipe in half and added more broth…dumped in a can of mushroom after reaching pressure…perfect dinner..so simple..so quick❤️thank you, thank you!
