Instant Pot Garlic Herb Cheese Pasta

The result is one that will be done in 15 minutes from the time you begin prepping, making it a go-to, crowd-pleasing meal of all ages for lazy days, busy nights and everything in between. Ingredients
- 1 pound gemelli pasta (or any short-form pasta such as farfalle)
- 4 cups broth of your choice
- Choose one: 3/4 cup garlic herb cheese, 5.2-ounce package of Boursin garlic & herb cheese, OR 6-ounce tub of Alouette garlic & herb cheese
- 1/2 cup grated Parmesan or Pecorino-Romano cheese
Instructions
- Add the pasta and broth to the Instant Pot, smoothing out the pasta with a wooden spatula or mixing spoon so it's mostly submerged in the broth.
- Secure the lid, move the valve to the sealing position, and hit Pressure Cook or Manual for 6 minute at High Pressure. Quick release when done. You'll see some broth will remain in the pot, which is exactly what we want for our sauce foundation.
- Add the herb cheese and Parmesan and stir until combined and melded into the sauce. Let rest for a minute before serving.
Jeffrey's Tips
If you have leftovers or if the pasta sits out a while, add a few splashes of some cream, half-and-half, or milk to the pasta and mix in to bring it back to saucy life. Same with any leftovers in the fridge - just add some cream and mix while reheating on the stove or in the microwave.
For a nice tomato-kissed finish, add a few splashes of your favorite marinara sauce after adding the cheese in Step 3.

Made this today after seeing your post, and it is delicious. I actually like it more than regular mac and cheese. I used small shells that I had on hand, which made it a bit drier, so a little added milk and spoonful of butter were necessary, but we will definitely make this again! Thank you for sharing this creation!

Sounds similar to a dish I had in an Italian restaurant.. The only difference is they had shrimp added to it.

Excellent recipe. I took the advice of a Youtube comment and added rotisserie chicken dark meat then added some Korean red pepper flakes to give it some extra pizzazz.
