Your Instant Pot doesn’t only need to be used to pressure cook. Nope! It can just as easily be used to sauté sauces and veggies instead of using your stovetop!
So it should come as no surprise that this is the PERFECT method to cook some zucchini noodles (“zoodles”) in some marinara sauce with amazing results!
If you’re watching your carb intake but are a pasta fiend (*raises hand*), this is THE solution to give you that feeling you’re eating an al dente linguine but without any of the starchy, carb-y, gluten-y guilt. Oh – and like me in college, it’s FAST and EASY!
Here’s How I Made It!: 
Start off with a pretty zucchini.
It may trigger some memories. Or it may not.
Anyway, use a peeler to skin it.
…insert the peeled zucchini, and rotate it as it begins to turn into ZOODLES! (zucchini + noodles, get it?)
When done, it’s going to look awfully funny. Do whatever you want with this piece (like stick it in your loved one’s ear if you’re feeling silly).
And just look at all of those zoodles! Absolutely lovely!
Now let’s go to the Instant Pot (or any pot on a stove), add in some marinara sauce (or any sauce of your choice) and give it some heat.  We won’t be pressure cooking this, but here’s a great way to simply use your IP as a sauté master!
Once the sauce bubbles, add in the zoodles.
…and toss them up with the sauce.
Allow it to cook for a few minutes so the zoodles heat up and soften lightly.
Spoon some into a bowl…
…top with some grated parmesan…
…and you’ll be in awe that this isn’t actually linguine.
Bring it to your mouth…
…and enjoy some SERIOUSLY healthy and guilt-free “pasta”!
See? I told you this was easy!

Which spiralizer to get?!

About two zucchinis = one good-sized portion of zoodles.

Feel free to use any type of sauce for the zoodles. It definitely doesn’t NEED to be marinara. You can do some garlic and olive oil or even an alfredo or vodka sauce if you wish!

Also feel free to add in some mushrooms too once you’re sautéing the zoodles in the pot with the sauce!

Make sure you cook the zoodles relatively quickly after spiralizing or they’ll be prone to browning from oxidation (a fancy scientific term for “direct exposure to the air”).

  1. Peel & spiralize your zucchini into “zoodles” (zucchini + noodles)
  2. Add some of your favorite sauce to Instant Pot, hit “Sauté” and “Adjust” so it’s on the “More” or “High” setting
  3. Once the sauce is bubbling, add the zoodles to the pot, toss them in the sauce, and allow them to heat up and soften for a few minutes (about 2-5). The zoodles will release some water while this happens
  4. Serve in bowls and top with some grated parmesan, if desired
  5. Enjoy!
