Instant Pot Carrot Bacon Chips (Air Fryer Lid)

Carrot Bacon seemed to take the interwebs by storm during quarantine. And it’s basically exactly what it sounds like – sliced carrot in a sweet, savory, smoky and sticky glaze and then crisped to pay homage to bacon. So, of course, I decided to make my own version that’s almost like carrot candy. But instead of using carrot strips, I use carrot chips which is way easier and better for perfect cooking.
But don’t let this recipe fool you. We won’t be pressure cooking our carrot bacon, but rather AIR FRYING it! And, we’ll be using the Instant Pot Air Fryer Lid to make this happen.

Here’s How I Made It! (scroll to the bottom for the fully-written recipe): 
 
Begin by taking two large, thick carrots. Peel them and slice them on the bias (diagonally) into chips about 1/8-inch thick.
 
Of course, you can save a bunch of time by just getting a bag of carrot chips in the market (found in the produce section, of course).
 
Now it’s time to make that amazing glaze. Combine pure maple syrup (not the synthetic kind)…
 
 
…which, in case this is new to you, is a gluten-free, soy-free and lower-sodium alternative to soy sauce. It’s also slightly sweeter and it tastes NOTHING like coconuts. It can be found in markets and easily online here.
 
We’ll also add some liquid smoke
 
…which is also found in the condiments aisle of most markets…
 
…seasoned salt…
 
…and garlic powder.
 
Stir to combine and set aside.
 
Now go to the Instant Pot and make sure the liner pot is in there.
 
Add in the air fryer basket that comes with the air fryer lid
 
…and place the metal partition in the basket (which also comes with it). We are placing this here so that the carrots are closer to the heat of the lid when placed.
 
Add the carrots to the basket…
 
…and brush on the glaze!
 
They don’t have to be DRENCHED in it – just nice and coated.
 
Add the air fryer lid and broil for 5 minutes.
 
Once done, carefully place the lid on the resting pod it comes with (making sure the cord is out of the way), and flip the carrots…
 
…as well as lightly glazing the other side.
 
Put the lid back on and broil for another 5 minutes (or until it’s as cooked as you want it)!
 
And VOILA! There you have it! Carrot Bacon Chips! If you want to make another batch, go for it – make as many as you want!
 
Transfer to a plate and let the party begin!

…crunch down on it.
 
…and be impressed! It’s almost like a sweet, savory, smoky and sticky carrot candy!
 
  • 2 tablespoons pure maple syrup
  • 1 tablespoon liquid coconut aminos or low-sodium soy sauce
  • 2 teaspoons liquid smoke
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder
  • 2 large carrots, peeled and sliced on the bias (diagonally) into chips about 1/8-inch thick (you can also just get a 1 pound bag of pre-sliced carrot chips if your market carries those – I like the kind with ridges)

How crispy you like your bacon is your call. Simply check on it while air frying and cook until it’s the desired crispiness!

To ensure even air frying, try not to overcrowd the basket with carrots laying all over each other. Do it in a few batches if need be.

And YES! You can totally do this in any air fryer or even roast in an oven at about 400°! Just keep an eye on it as all ovens vary and we don’t want burnt carrot bacon chips!

  1. Combine all the ingredients, except for the carrots, in a mixing bowl.
  2. Place the liner pot in the Instant Pot. Then, with the metal partition in position, place the air fryer basket in the liner pot.
  3. Place the carrot chips in the air fryer basket and brush the glaze on them.
  4. Add the Air Fryer Lid, hit Broil (400°) for 5 minutes and hit Start to begin. Flip midway through, baste with more glaze and then hit Broil for another 5 minutes. When done, let cool for a few moments before enjoying now or later.
